Macaroni Grill Bread

From Grandma Gilmore

1 pkg dry yeast
1 T sugar
1 C warm water
2 1/2 C water
1 tsp salt
2 T rosemary
1 T canola oil or olive oil non stick cooking spray
2 T butter
Coarse salt

Place yeast, sugar & water in large bowl & allow mixture to become bubbly.
Mix in 2 C flour, salt & 1 tsp rosemary (might have to add the additional 1/2 C flour).
Knead 5 - 10 minutes by hand (or 30 seconds w/ food processor) until smooth & elastic.
Oil bowl & put dough in bowl, cover with towel & let rise in warm place to double (about 1 hr).
Punch down dough & divide in half. Let dough rest for 5 - 10 minutes on sprayed cookie sheet. Shape dough into 2 round ovals. Brush butter on loaves, sprinkle with remainder of rosemary & coarse salt.
Allow dough to rise to double again (about 45 min.)
Bake at 420 for 15 - 20 min.

Ham Pinwheels

6 large flour tortillas
2 - 8 oz pkg. cream cheese (softened)
1/3 C mayonnaise (can substitute Miracle Whip)
1/2 C sliced or diced olives
2 T green onions (cut up fine)
3 - 2.5 oz cans Carl Budding ham

Mix together cream cheese, mayonnaise, black olives and onions. Spread thin and evenly on flour tortillas. Place 4 thin slices of ham on each tortilla.
Roll tightly & place plastic wrap around EACH roll. Refrigerate overnight.

Remove from refrigerator & slice in 1/2 to 1 inch slices.

Southwest Sausage Bake

A Christmas morning favorite - from Alta Marshall (Grandma Gilmores clan)

6 flour tortillas (10 in) cut into 1/2 inch strips
4 cans (4 oz. each) chopped green chilis, drained
1 lb bulk pork sausage (Bob Evans is the best), cooked and drained
2 C shredded Monterey Jack cheese
10 eggs
1/2 C milk
1/2 tsp. salt
1/2 tsp. garlic salt
1/2 tsp. onion salt
1/2 tsp pepper
1/2 tsp. ground cumin
Paprika
2 medium tomatoes, sliced
sour cream
salsa

In a greased 9 x 13 baking dish, layer half of the tortilla strips, chilies, sausage and cheese. Repeat the layers.
In a bowl, beat the eggs, milk & seasonings; pour over layers. Sprinkle with paprika. cover & refrigerate overnight.
Remove from the refrigerator 30 minutes before baking. Bake, uncovered at 350 for 50 minutes. Arrange tomato slices on top, bake an additional 10 - 15 minutes or until knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.
Serve with sour cream and salsa.

Seafoam salad

Another from Grandma Gilmore


1 large box lime jello
1 large can pears
1 - 8 oz package cream cheese (softened)
2 envelopes Dream Whip, prepared per pkg. directions

Mash pears only in a separate bowl.

Add water to pear juice to make 3 cups. Boil liquid & add to jello mix in serving bowl. Add the mashed pears & cream cheese.
Fold in prepared Dream Whip.
Chill & serve




Veggie Pizza

The girls' Grandma Gilmore would make this for get togethers. YUMMY!

2 packages crescent rolls
2 - 8 oz bricks cream cheese (softened)
1 C salad dressing
1 envelope Hidden Valley ranch dressing
3-5 fresh vegies (ie brocolli, cauliflower, carrots, tomatoes, olives, bell peppers)

CRUST
Spread crescent rolls on cookie sheet, bake following package instructions. Cool.

"SAUCE"
Mix cream cheese, salad dressing & ranch dressing mix.Spread on crescent roll crust.

TOPPINGS
Chop fresh vegies & top your pizza

The Best Meatloaf Ever

This is the first meal I learned to make when I was in 2nd grade. It is nostalgic for me and one of my family's favorites. Unfortunately for you, I have never measured any of the ingredients. Just do it "to taste".

Ingredients:
2 lbs. ground beef
2 or more 16 oz. cans tomato sauce
1 egg
chili powder
diced yellow oniondried bread crumbs or crumbled saltine crackers
Worcestershire sauce

Directions:
Pour about half a can of the tomato sauce and some of all other ingredients onto the ground beef. Mix it all up with your hands (remove your rings or else they will get really gunky). Form the meat mixture into a loaf shape and place in a 13 x 9 x 2 baking pan. Place in preheated 350° oven.

Pour the rest of the tomato sauce into a bowl (a large measuring cup is best because of the pouring spout) and mix in some chili powder and Worcestershire sauce. Put aside.

After the meatloaf has been baking for about 30 minutes, remove from oven and drain excess grease. Then pour the rest of the tomato sauce mixture over the top. Put it back in the oven and bake for another 45 minutes or until done (cut into the middle to be sure the meat is not red or pink).

Slice the meatloaf. Serve the tomato sauce gravy over mashed potatoes and over the meatloaf if desired.

Strawberry Pizza

Crust  (bottom layer)
2 C flour
1/2  C powdered sugar
1/4 tsp salt
1 C (2 sticks) butter

Mix all ingredients & pat into a 9 x 12 inch baking dish/pan.  Bake at 350  degrees until lightly browned, about 10 - 12 min.  Cool

Second Layer
8  oz cream cheese
1/3 C lemon juice
1can sweetened condensed milk
1 tsp vanilla

Mix all ingredients and spread over cooled crust.

Top Layer
1 pint strawberries (frozen or fresh with sweetened juice)
1 tsp. cornstarch

Thicken strawberries and cornstarch mixture over medium heat. Spread over cream cheese layer.

CHILL IN REFRIGERATOR.
Slice and serve
